Let's talk about yesterday. I started out on a good foot but ended on a relapse. I was able to do some prep this afternoon for tomorrow's breakfast. I may prepare one of my snacks tonight but not sure.
No pictures were taken of the meals. I meant to for tonight but was hungry and totally spaced out!
Breakfast for both days was similar to the Breakfast "Use it Up" Scramble. I didn't use the ground turkey but did use lots of veggies like broccoli, zucchini, green pepper, and a mushroom. Used egg substitute. Seasoned with Bacon Bacon, Onion Onion, and Seasoned Pepper.
Yesterday's lunch was the leftover Pesto Chicken & Veggie Skillet. Today was a Big Sexy Salad with the Salsa Beef and Citrus Herb Vinaigrette Dressing.
Snacks were almonds, carrots, and cucumber slices.
Dinner last night was pizza from Papa Murphy's. Tonight I fixed Roasted Salmon & Veggies. The veggies were broccoli and carrots. I will be using the leftover salmon for salads.
Hard to believe we are halfway through this week. I need to prep tomorrow's dinner as it needs to marinate at least 2 hours to overnight. Guess I won't make the snack mix. I'm tired.

14-Day Reset Day 3
Good evening. This has become my accountability partner. I let you know how I'm doing in meeting my goals on healthier eating.
So, today's menu was modified as well. I'm enjoying the new menu items. Some of these require advance preparation (and I didn't always do that). Check the recipe link.

Breakfast - Make Ahead Microwave Omelets. This was delicious. And I didn't make it ahead (but did freeze two of the servings for next week). The recipe called for 93% lean but I used 99% and I used egg substitute. No change or eliminations made on the other ingredients. I recommend using at least 1 1/2 cup microwave-safe container. It was difficult to stir in a 1 cup bowl - it spilled over onto the plate. I also recommend spraying your skillet (especially if you use 99% lean meat).
Morning break - deviated from the menu and had a repeat snack - Cinnamon Nut Energy Bars. The container I'm using must not be very airtight - the bars are getting moist and falling apart.

Lunch - Big Sexy Salad. It's not like it sounds but it is my favorite. Almost what I have on workdays anyway. I used a 50/50 salad mix (it has spinach, kale and a few other lettuce greens) and added broccoli, cucumber, celery, mushrooms, and red pepper. My protein was tuna fish (a low sodium). My dressing was Citrus Herb Vinaigrette. This is quite filling.
Afternoon snack - I had the morning snack - Turkey Avocado Bites. Funny thing is - I had just the turkey! This girl does not like avocados or grape tomatoes. I did sprinkle some seasoning on the turkey.
Dinner - Balsamic Glazed Salmon. This was supposed to have been yesterday's dinner. We love salmon (and not that farm-raised, color added stuff!). I used a broiler pan and broiled it in the oven. I added fresh green beans covered with Bacon Bacon and Onion Onion Seasoning. I used our Avocado Oil instead of olive oil.

Sweet Mustard Bacon Burgers

Please feel free to do substitutions of any of the ingredients. I used ground turkey and Tastefully Simple's Bacon Bacon. We also ate it as a patty and not as a sandwich.
Ingredients:
1 1/2 lbs lean ground beef
1/2 c real bacon bits
1/2 c Sweet Mustard Moppin' Sauce
Salt & Pepper to taste
1 Tbsp Chipotle Seasoning (optional)
6 slices Cheddar Cheese
Sliced red onion (optional)
6 lettuce leaves (optional)
6 whole wheat hamburger buns
Assembly Instructions: Combine first 5 ingredients; form into 6 patties and place between wax paper in gallon resealable bag. Seal well, label and freeze.
Cooking Instructions: Thaw completely. Grill or fry to desired doneness. Toast buns, if desired. Top burgers with cheese, onions and lettuce if desired, and place on buns.
I used a seal-a-meal (or vacu-pack) instead of a gallon resealable bag.
As a side dish, we had raw veggies with the Tastefully Simple Dill Pickle Dip mix made with fat free sour cream and fat-free mayonnaise.
Yummy! We grilled the burgers on our BBQ so no heating up the house on this hot evening. I used the Chiptole Seasoning.

Bayou Bourbon and Bacon Meatloaf
This is a recipe that was from an older Freezer Meal Workshop entitled "Back to School". If you love meatloaf, this is the best! Moist and yummy. We both enjoyed it.
As with any recipe, feel free to substitute any ingredients. I actually left out the pepper and orange marmalade and I doubt I used the full amount of glaze.
Ingredients:
1 lb ground pork (beef, chicken, or turkey)
1/3 c oatmeal
1/3 c milk
2 Tbsp Bacon Bacon
1 egg
1 tsp pepper
3/4 c Bayou Bourbon Glaze
1/2 c orange marmalade
Instructions:
Mix together first 6 ingredients to form meatloaf. Place in loaf pan - or make into smaller loaves if you desire. Mix together Bayou Bourbon Glaze and Orange marmalade and pour over top of meatloaf. Bake at 375 degrees until internal temperature reads 145-150 degrees (about 45 minutes).
Suggested sides: Green Bean & Artichoke Casserole & Baked Potatoes. As you can tell from the photo, we had fresh steamed broccoli and baked potato.

Imitation Bacon Bacon
Tastefully Simple has lots of products in their standard line as well as the seasonal. Bacon Bacon is another one of those staple products that is in my cupboard and is my featured product of the month.
I use it in place of imitation bacon bits or real bacon bits. What does that mean? Less items in my spice cupboard or stored in the refrigerator!
INGREDIENTS: Imitation bacon bits (textured vegetable protein [soy flour, caramel color, red 3], salt, partially hydrogenated soybean oil, natural flavor, hydrolyzed corn, soy and wheat protein), minced onion, salt, natural flavor.
Nutrition Facts: Serv Size: 1 Tbsp (7g), Servings: about 17, Amount Per Serving: Calories 25, Fat Cal 5, Total Fat 0.5g (1% DV), Sodium 220mg (9% DV), Total Carb 4g (1% DV), Fiber 1g (4% DV), Sugars 2g, Protein 2g. Not a significant source of sat fat, trans fat, cholest, vitamin A, vitamin C, calcium or iron. Percent Daily Values (DV) are based on a 2,000 calorie diet.
One capful is approximately 2 Tablespoons. I use it every weekday in my morning omelette. I also use it on my baked potatoes as a topping and on top of homemade corn bread.
